
3 Potatoes, peeled
Large bag frozen broccoli, thawed
15 baby carrots
2 tablespoons chopped onion
Dice potatoes into small enough chunks to fit into a food chopper. Dice into small pieces and set aside. Do the same with the carrots and onion. Chop broccoli pieces into desired size with a large knife. Place all veggies in a covered pot of boiling water and let simmer until soft.
Sauce:
1/2 cup milk
4 C. milk
1/2 shredded cheddar
1/2 cup flour
1/2 lb velveeta cheese, cubed
1 tablespoon chicken flavored soup base
Melt butter in a large sauce pan and add flour until smooth. Add the milk and soup base, stirring continuously until thickened. Add velveeta cubes and cheddar, stiring until melted. Drain veggies, leaving about a 1/4 cup of water in pan. Add cheese sauce and stir well. Salt and pepper to taste. Enjoy!
I have to admit that I "borrowed" this from another blog...It just looked so good! I know my girls will love it!

Hey I'm late today. (slept in after my hot birthday date--ha, ha) Funny thing is I just finished posting a recipe today too!
I think if I chopped the broccoli sort of fine, my kids would TOTALLY eat that soup!
